Introduction:

DKP is also known as dipotassium hydrogen phosphate, dipotassium salt, or potassium phosphate dibasic. Its aqueous solution is weakly alkaline. 

 

In food industry, it is used as buffering agent, chelating agent, yeast food, emulsifying salt, synergistic agent of anti-oxidation.
